Edam and Gouda, hard cheeses

Edam and Gouda are two ripened hard / semi-hard cheeses compliant with the general cheese regulation (Codex stan 283-1978).

Mild, slightly salted, Edam has a slight taste of hazelnut. With a low odor, its taste grows stronger as it gets older. Several types of Edam exist depending on the degree of ripeness:

  • Young Edam
  • Semi-steamed Edam
  • Steamed Edam

Edam contains 25% proteins and 40% fat. Such a composition gives Edam a soft crust.

With a creamy texture, Gouda taste is mild and grows stronger depending on its maturing process:

  • Tender Gouda
  • Semi-steamed Gouda
  • Steamed Gouda

 

Product information

Manufacturing process of Edam and Gouda

  • Pretreatment of milk / pasteurisation: the objective of the treatment is to create optimal conditions for manufacturing and eliminating bacteria that may affect cheese quality.
  • Initiation culture: adjunction of a bacteria culture (mesophile, thermophile or mix of strains) adapted to the cheese type and mixed with rennet. These cultures have 3 main roles:
    • Lactic acid production
    • Breakdown proteins
    • Carbon dioxide production
  • Rennet: all cheese manufacturings depend on curd formation by rennet action or similar enzymes. Casein coagulation is a fundamental process. Coagulation takes place after adjunction of rennet in the milk.
  • Coagulum cut: coagulation time is around thirty minutes. A slow and meticulous cut separates curd in grains and accelerates whey separation.
  • Before curdling: mix must be fast to keep curd grains suspending in whey.
  • Cooking: it depends on the bacteria types, time/temperature programme is determined according to the type of cheese.
  • Final curdling: mechanical action of agitation and continuous formation of lactic acid allow extraction of a bigger quantity of whey from curd.
