Edam and Gouda are two ripened hard / semi-hard cheeses compliant with the general cheese regulation (Codex stan 283-1978).
Mild, slightly salted, Edam has a slight taste of hazelnut. With a low odor, its taste grows stronger as it gets older. Several types of Edam exist depending on the degree of ripeness:
Edam contains 25% proteins and 40% fat. Such a composition gives Edam a soft crust.
With a creamy texture, Gouda taste is mild and grows stronger depending on its maturing process:
